Chimangos are small snacks made from wheat flour and are influenced by Spanish cuisine. The Southern Californian adaptation was driven by the need to prepare small dishes that were easy for ranchers to transport during their long horseback rides across the peninsula.
Over time, chimangos became a traditional dessert deeply rooted in Southern Californian culture.
According to our grandmothers, these snacks were made with corn flour, but today it’s more common to see them made with wheat flour, with milk added, an ingredient that wasn’t used previously; only water was used.
In many typical restaurants in our destination, they serve this delicacy accompanied by panela cheese and refried beans. This combination is authentically Southern Californian.
And of course, we can’t leave this delicacy without a delicious “café de talega,” which is also prepared in a very traditional way. Because if there’s one thing that characterizes Mexicans, it’s their way of preparing everything. They always find a unique way to create new flavors with their own techniques, elevating the pleasure of food and drink to a higher level.
Talega coffee is so named because “talenga” means sack or bag. This bag is made of cotton cloth, attached to a frame with a handle, placed inside a pitcher, and used to filter the coffee.
It is said that this method of making coffee was developed by the indigenous people living in the north of the country. Although there is always a dispute over its true origin —some say it’s from the north, while others claim it’s from the South of the peninsula —the truth is that this ancestral delicacy is a gift we can enjoy every day.
